RESUMO
Este trabalho tem o objetivo de estudar a uva in natura e seus resíduos pósprocesso de vinificação, buscando informações quanto aos nutrientes obtidos e a presença de metais pesados em cada etapa do processamento da fruta.
Com este estudo será possível definir, o quanto de nutrientes poderemos devolver ao sistema de produção de uva através da compostagem e também checar a qualidade do produto quanto a contaminantes. Além disso, será verificada a viabilidade da produção de fertilizantes com os resíduos da própria uva.
Os trabalhos mais recentes nesta área foram feitos e publicados por CATALUÑA,
(1984) e GOBBATO, (1942), no entanto nenhum deles aborda diretamente os nutrientes e os contaminantes, dados essenciais para compreender a eficiência da compostagem como método de produção sustentável.

ABSTRACT

The present article considers the grape in its in natura format and its residues after the vinification process, trying to understand the nutrition facts obtained and the presence of metal substances in every processing stage of the fruit.
The study will verify the amount of nutrients that is possible to keep in the wine production process using the compostagem method, and also verify the pureness of the product by detecting the contaminant substances.
Besides that, the study intends to check the viability of using the grape residues from the vinification process to produce fertilizers.
The most recent studies in this area were done and published by
CATALUÑA, (1984) and GOBBATO, (1942). However, none of them
